Fall Back Into Routine with these Apple Fritter Bites

Fall is upon us, and this year, September marks not only a return to school but for many a return to the office as well. After many months of working from the home office, only a short walk from the kitchen, have you forgotten how to meal-prep work-friendly meals? Wondering “How did I even do this before?” Looking for a snack that’ll satisfy everyone’s inner-child?


Look no further than these Bite-Sized Baked Apple Fritters. Using Fleischmann’s baking powder and Mazola vegetable oil, these packable treats will surely satisfy your midday sweet tooth.

Bite-Sized Baked Apple Fritters

Ingredients:

¾ cup granulated sugar

¼ cup Mazola® Vegetable Oil

2 teaspoons Fleischmann's® Baking Powder

1 large egg

1 teaspoon real vanilla extract

1 cup plain Greek yogurt

1 ½ cups all-purpose flour

1/2 teaspoon ground cinnamon

1 large apple, peeled, cored, and diced*

*Gala apple preferred, but Granny Smith, Fuji or Honeycrisp are also okay.

Directions:

  1. Preheat oven to 350°F and lightly coat a mini muffin pan with cooking spray.

  2. In large mixing bowl, mix sugar and Mazola® Vegetable Oil together until combined.

  3. Whisk in egg and vanilla, then add Greek yogurt and mix well until smooth.

  4. In a separate bowl, combine flour, Fleischmann’s® Baking Powder and cinnamon. Add the dry ingredients to the yogurt mixture and gently fold in with a spatula until the batter comes together.

  5. Gently fold in the diced apples.

  6. Fill muffin tins with batter and bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove the fritter bites from the oven to cool for 10 minutes.

  8. Serve and enjoy!

Caramel Drizzle

Ingredients:

½ cup granulated sugar

2 tablespoons water

3 tablespoons butter

1/4 cup heavy cream

1 teaspoon vanilla

Directions:

  1. In a small saucepan over medium heat, add sugar and water.

  2. Let simmer until the mixture turns an amber colour. *Be careful to not let the mixture burn.*

  3. Add the butter carefully to the hot mixture and whisk until melted.

  4. Remove the saucepan from the heat and slowly pour in the cream and vanilla.

  5. Whisk until well combined.

  6. Let cool in the pan for 10 minutes. *The caramel will thicken the longer it sits.*

  7. Drizzle over the fritters and enjoy!
